i got a deep fryer for christmas - help!

ok, so i know all the traditional things that can be done - chicken, fish, fries, etc....but what is your favorite thing to fry?

    Egg rolls or lumpia
    Crunchy Tiger Shrimp ( a cornstarch based batter that is super crispy)

    We do the usual chicken wings, home made fries skins on.

    But another of the things I hope to do this year, is shrimp toasts I have so many recipes accumulated its time! Oh and deep fried raviolli, make my own so they'll be a little different.
    And then the other thing I love but just haven't ever done it is to make sopapillas and fill with honey!

      thanks for all of the suggestions. i took a dim sum class at whole foods tonight and learned a great new fried shrimp ball recipe that will be fun too. i plan on going against the resolution and breaking it out for its first use new years day. everyone needs their vitamin g (grease) right?

          French fries and breaded fish ARE the things I fry most often and the reason I got mine years ago. Eggplant cutlets and oriental appetizers are a close second.

              - chicken wings(brine them first)
              - breaded chicken cutlets
              - homemeade eggrolls
              - homemade wontons
              - shrimp(brine them first)
              - beer battered anything(mushrooms, etc)
              - hot dogs

                What's a guy from Chicago doing deep frying hot dogs? Are you sure you're not from Jersey?

                  funny.. :-D

                  I saw it done on t.v., and had to try it myself. Like most things deep fried... hot dogs are pretty darn good after a bath in hot oil..

                  I love fried artichoke hearts. I've never made them, but a certain caterer serves them at many of the weddings I go to, and it's always the first thing I eat.

                    Tempura .....shrimp and vegetables...especially the sweet potato and acorn squash
