Need a recipe for Mac & Cheese with Leftover Baked Ham

I melt my grated cheese into a bechamel sauce, then pour it over noodles in a greased pan, the bake until set. I also add chopped baby spinach and ham or bacon, to make it more of a complete meal.
I don't have a specific recipe, but I think if I wanted to cut the fat I would have to do something first about the cheese in the recipe, cut it back, rely on grated Parmesan instead of the softer cheeses we tend to use here in the States, or even skip the cheese in the sauce and instead sprinkle grated Parm, or Romano, or Pecorino only on top, instead. I don't usually have whole milk on hand and so use 1 percent or 2 percent or whatever's here...and that would cut a little bit of the saturated fat, anyway. Or use EVOO instead of butter to make my roux.
One other thing you could try, if you like mustard...a lot of mac and cheese recipes I've look at online include dry mustard. Skip that and use one or two tablespoons of your favorite prepared mustard to make the sauce. It's a natural with ham and prepared mustard, I find, emulsifies so well.
