Coming to Paris in May

Looking for back alley bistros, cafes, and boulangeries. I'm also looking for a 1 star, or possibly 2, that are a great value. Any suggestions would be great. I'm looking for interesting places, that are not touristy.

    Some of my favorites: duck "en Limousin" (confit) and the best fruit tartes in Paris at Lescure on rue Mondovi near Concorde, an Alsatian feast at Chez Jenny, Saucisse de Montbéliard followed by Poulette fermière à la crème gratinée and dessert, anything off the menu at Chez l'Ami Jean...boy, do I love Paris! None of these places is starred and none is expensive, generally 30-40 euros for a complete meal, including house wine. Bon appetite!
