Non-pork chorizo or bacon?
Is it possible? Can it be found in the Tampa Bay area?
I don't eat pork, but did as a kid and want to recreate some old recipe memories. Specifically, North Mexican foods such as frijoles charros.

The is a product called Bacon Salt -which has no pork products in it; but has a remarkably good bacon flavor. In the world of "bacon Bits", my professional preference is for the Safeway brand artificial bacon bits made with tofu. In large (and maybe small) chinese markets you can find 'flavored tofu' in many delicious flavors including ham, bacon, duck, etc.
If you're trying to mimic the flavor of pork/bacon, you might want to start with small doses of LiquidSmoke, available in most groceries,which comes in several different flavors. "A little dab'll do ya". It's the smoky-saltiness that bacon/ham bring to the party that our tastebuds react to.

In my mind, if it's not from pork it certainly isn't bacon. Chorizo depends a lot on the fat content from prok but can be made with beef or chicken. It isn't too difficult to do yourself. See this recipe.

I agree, I guess I should have said "bacon." I need to approximate the flavor these items give to foods. My main goal right now is frijoles charros but I would like to branch out. I grew up eating pork, and now don't for religious reasons but miss some of the foods I ate as a kid never knowing that pork was involved.
