re: epicureous eggplant
The menu offerings look great. I spent 12 days in Honduras and never saw a menu with food like that on it! We did eat with some locals on the beach once and they coated the chicken pieces in corn meal and deep fried it in a large dutch oven. They also fried plantains. I never saw a salad there! I did eat some great king fish that was smothered in this wonderful garlic sauce.
