        <content>I have a bread recipe I wish to make that calls for potato flour as one of the ingredients.  I have on hand an unopened box of Potato Starch Flour.  Are these two items one and the same thing? If not what would be the differences?</content>

      <content>No, they are not the same.  Potato flour is made from potatoes that have been cooked, dried and processed into flour.  Potato starch flour is made from the starch that has been extracted from the potato.  Potato starch flour is more like arrowroot or corn starch.</content>

      <content>no, no no...they're two completely different things.

potato flour is made from whole potatoes that have been cooked, dried &amp; ground into a flour.

potato STARCH flour is the isolated starch from ground raw potatoes.

please don't try to use the starch in place of the flour, it'll ruin your recipe.</content>

      <content>Thank you for your reply.  I had a idea that they were different.  What made me wonder is the Potato Starch Flour box had cookie recipes printed on it.</content>

      <content>The starch is used in cookies to produce a tender texture.  Other starches work as well.  In effect starch reduces gluten content.

I wonder what potato flour does in bread?  Commercial potato rolls tend to be pretty light in texture.

      <content>Some yeast potato bread recipes use freshly cooked potatoes, mash.  I suspect that instant mashed potato flakes would be workable substitute in those recipes.</content>
