Advanced Cooking School in Chiang Mai?

Hi there - I am planning a trip to Thailand this summer and I would love to take some cooking classes. I am pretty well versed on Asian cooking and I would like to expand my skills. Does anyone have a recommendation of a cooking school that does more then just the basics?

Suggestions of schools and/ or moderately priced places to stay would be great. I am looking for a 2-5 day course.

I believe Chiang Mai cookery School has beginner and master level classes, taught at a restaurant and their outdoor cooking studio.
