Vanilla help!

We're battened down for the blizzard. I have everything for congo bars EXCEPT vanilla extract. Should I leave it out? What will happen? Could I use almond extract instead? I'm more a cook than a baker; i know I should know these answers...Thanks!

  1. You can use a liqueur, brandy (even flavored brandies, e.g peach, apricot, etc.) a good Kentucky whiskey or a good quality Scotch whiskey. You could, of course, use almond extract if you like.

    1. I'd just leave it out. Congo bars, if I remember what they're like, have plenty going on flavourwise anyway. Don't sweat it and don't LEAVE the house today!

      1. I have no idea what congo bars are so this may not be very helpful but I'd go ahead and mix the ingredients I do have, then taste, if it tastes likes it's lacking you can add almond extract, liqueur or whatever. Just my 2cents
