There's a Super Mex in Belmont Shore and another on PCH as you drive south from Seal Beach. Super Mex is a family operation that has good moments and bad, but you have to be from the area to understand how popular this place is.

I do not recommend the huevos rancheros at Super Mex; I had them a couple of weeks ago. Just a couple of fried eggs on a plate with rice and beans, topped with, IIRC, 2 or 3 pieces of some kind of cooked vegetables. Nothing special. No ranchero sauce.

I rarely eat huevos rancheros, so can't offer a specific recommendation. But for my money, the best Mexican in LB is El Ranchito, on Long Beach Bl. in North Long Beach. I mainly eat dinner there, but everything is excellent, so I have to believe their huevos ranchros would be very good. Worth a try.

This is too late by 3 1/2 years but everyone needs to know that by far the BEST huevos rancheros are at Egg Heaven, Fourth and Ximeno in Long Beach. One huge and amazing platter with absolutely greaseless potatoes and nippy in-house salsa will spoil you for any other huevos.
