Help: can't find the Bordelaise recipe of Christmas past

waver Dec 17, 2008 04:19 PM

We've decided to take a break from the usual duck breasts for Christmas and want to revisit an old favourite: roast beef tenderloin with Bordelaise sauce. The recipe came from an old French cookbook and involved a bunch of roasted vegetables. I can't remember if they were served around the roast or pureed into the sauce but its the sauce we're really after. Any ideas?

      That looks really close, thanks.

you're welcome. after I responded to your request, I received my Dec issue of Saveur. They have a whole section on French sauces including Bordelaise which includes a recipe for home-made demi-glace--roasting lots of veg and veal bones. The Bordelaise recipe can be made with store-bought demi-glace, though. If you go to the link that I gave you above and then type in Bordelaise sauce in the search box, it will take you to the newer recipe so you can compare.

Take a look at this recipe. I've used it, and thought it was very good.
