Couscous ideas?

I love couscous, especially with tomatoes and eggplant! My son, unfortunately, does not like tomatoes (eats pesto on his pasta) or any sauce that gets things 'goopy'. He does like flavorful spices, and sauces that are somehow part of the dish are ok--he loves saag paneer, pad see ewe, and stir fry.
Can anyone suggest a vegetarian main course dish with couscous, preferably with carrots, peas, and/or spinach?

Add pesto, peas, shredded carrots and raisins to it. It's good hot or cold.
