Freezer failure - defrosted fruit
Our freezer failed, and I now have a ton of defrosted fruit - sour cherries, peaches, blueberries, strawberries, and a few bags of raspberries. I think we'll be getting the canner out this weekend. Any suggestions?
If you are a pie-maker, cook some of the fruit up, sweetening and thickening as you would if you were making a traditional pie, then freeze it in pie-appropriate amounts. There are recipes for fruit pies which recommend cooking the filling separately from the crust- the bottom crust is partially or fully baked, the filling heated, and then topped with already-baked top crust or a crumb topping.
