Freezer failure - defrosted fruit

Hi Chowhounds,
Our freezer failed, and I now have a ton of defrosted fruit - sour cherries, peaches, blueberries, strawberries, and a few bags of raspberries. I think we'll be getting the canner out this weekend. Any suggestions?

    two ideas: 1. have some cobbler! http://www.chow.com/recipes/13522 i'd use some peaches for that dish, which is warm, delicious, and comforting these chilly days.

    2. add some jalapeno or serrano to some strawberry jam.

    1. If you are a pie-maker, cook some of the fruit up, sweetening and thickening as you would if you were making a traditional pie, then freeze it in pie-appropriate amounts. There are recipes for fruit pies which recommend cooking the filling separately from the crust- the bottom crust is partially or fully baked, the filling heated, and then topped with already-baked top crust or a crumb topping.
