cooking for family over holiday-chicken parmesan and....?

We usually cook for our exceptionally picky family one night over christmas time. This year the request was chicken parmesan- not really the WOWing kind of dish we like to make for them. SO, we want to go all out on apps/sides/alternative entree. any ideas of what goes with breaded chicken parm?

  1. The chicken parmesan is alot so I would say do a simple starch and vegetables. Like flavorful mashed potatoes and mixed veggies (medley of broccoli, sweet carrots, and califlower).

    1. Make one large pot of quick marinara ala Lidia B's and then use the sauce to make pan fried chicken parm (egg, flour, grated parm on breasts then fried til golden, add sauce, more basil, lay a slice of fresh motz and then cover) and another dish of sauteed eggplant with capers and olives. Serve with a pasta or grilled polenta and a green salad. The whole meal is very easy and fast and is one our large family will be using over the holidays.

      1. Steamed asparagus and toasted garlic bread topped with melted mozzarella.

        1. Just make a similar type of dinner and the hit of the meal was the ciabatta garlic bread--from the newest Barefoo Contessa cookbook. I kept thinking--it's just garlic bread! but everyone loved it!
