USDA Prime Meats
Are there any butcher shops in the Philadelphia area that you can get USDA Prime meat? Prime is usually reserved for restaurants and the best you can get at most butchers or supermarkets is USDA Choice.

There's something just wrong about cryovacced meat (the only kind Wegman's purveys)!

They're very nice at Wegman's. Bring your own butcher's paper and tape and ask the butcher to wrap it up in that. Close your eyes or leave for a few minutes and when you come back the meat will be wrapped just like your neighborhood meat market. ; )

Almost all meat sold in American is broken down into primals or sub-primals and shipped via shrink-wrapping.
Very few butchers purchase entire steers and break them down.
And please note that there's a huge difference between "cryovaccing" for transport and cryovaccing for wet aging. For the record, Table 31's heralded steaks are wet aged.

If you're headed out to southern Chester County, head to the Country Butcher in Kennett Square for USDA Prime meat. Their quality and service is hard to beat.
