Meat Lovers Who Eat at Home (Mid Hudson Valley)

I spoke to the meat manager at Adams Fairacre Farm in Kingston and he told me that he is willing to age any cut of local beef. (The farm is located in Pine Plains.) He added that he would need several weeks notice and I should expect to pay $5-6 dollars more per pound.
