And, yet another trends forecast for 2009, this one by survey of more than 1600 chef-members of the American Culinary Federation.
I have a 2009 trend for you... RIPs.... many of them, tight credit will mean other restaurants will be slow to fill the void.
On a somewhat brighter, albeit completely unimportant in the grand scheme of things, note... anybody agree that these surveys tend to run about 2 or 3 years behind the Chowhound crowd (at least in the active markets with rapid adoption / innovation)?
