I am trying to find some sort of translation of mexican menudo in Brazilian cuisine.

Street has mentioned Mocoto, which he has enjoyed in brazil. It seems to be more of a pig or cow hoof soup but the southern gaucho version does include tripe as well.

See: http://brazilian-food.suite101.com/article.cfm/mocoto

Doing some research I came arcoss dobradinha - http://commons.wikimedia.org/wiki/Image:Dobradinha_(385585453).jpg which may be what I am looking for. Anyone try it? Or can explain variations on the theme of tripe soups or guisado - stew like foods in brazil?

Geez, do we really have to do this online? Eu te dou a receita que tenho bobo.

Ana Maria Braga has a popular cooking show on Globo, and has recipes sent from all over Brasil.

This will vary from region to region just as it does in Mexico, from the southern gauchos, the African infuenced culture of Bahia, the southeast(Rio, Sampa, and Minas), Amazonas, and the northeast(Pernambuco, Rio Grande do Norte).
