lost recipe -- Mimi's stuffed eggplant (Original Moosewood)

Hi hounds--

In my oldest version of the Original Moosewood Cookbook, there were three recipes for stuffed eggplant. My favorite was called Mimi's eggplant -- I think, and it featured ricotta, parmesan, basil, mushrooms, a little tomato paste, and of course the eggplant. I can't find my copy of the recipe! Can anyone paraphrase it for me? It does not appear in more recent printings of the book. The page has come out of my original copy and I can't find it!

Thanks! :) I started making this nine years ago for vegetarian dinner parties when I was living in Colombia. One of my first cooking accomplishments! Now I'm craving it! It is rich and delicious.
