Hi all,

I need some help finding a great recipe. I've lost a recipe for make ahead mashed potatoes that calls for either creamed cheese or sour cream. Does anyone have the recipe? Can you share it?

It is a fabulous recipe to have on hand during the holidays as the casserole can be made a few days ahead and then just warm up in the oven.

I'll anxiously await a response!

Thanks a million,

This is what I came up with when I Googled "Make ahead mashed potatoes" : http://allrecipes.com/Recipe/Make-Ahead-Mashed-Potatoes-2/Detail.aspx The note at the top says "You can make these ahead several days and store in the fridge. If baking cold, let stand 30 minutes first."

I have made these Barefoot Contessa Parmesan Smashed Potatoes many times in advance. While it doesn't say it on the website, in the actual cookbook, Ina has a side note stating to sprinkle with parmesan cheese and reheat. It works beautifully and these potatoes are delicious.

The recipe that I always use is "Thanksgiving Potatoes", from The Silver Palate Good Times cookbook. Besides being delicious, the convenience of making them ahead of time is invaluable.

I make the allrecipes potatoes frequently. They can also be frozen with no problem, either in a casserole dish or in individual portions. Casseroles I let thaw in the fridge and heat in the oven. Smaller portions I just microwave until hot (they might look sloppy as they heat in the microwave, but once they are hot and stirred they are fine).
