I feel like this is something I know, and I will smack my head on the desk when someone tells me the answer. When you make beer, you're brewing. When you make whiskey, you're distilling. What do you call the process of making wine?

    "vinifying"?

      Yes, vinification. Also, winemaking.

        vinification describes the entire process from the harvested grape to the final blended product. fermentation is the biochemical step within that process.
