Let's stick to places with a bar where we can sit, and on the
gourmet side of things.

how would you play this?

If you are keeping it within a 6-hour time frame, it would work best if the restaurants are relatively close geographically so you don't use up much travel time. My line-up would be:

    Eleven Madison Park
    Gramercy Tavern
    Veritas
    Tocqueville
    Gotham Bar & Grill
    Bar Milano

Could you really just sit for an hour and just order apps at the first 3 places?

Absolutely! At EMP and Veritas, unlike the prix-fixes in their dining rooms, the bar menus are a la carte and geared towards "grazing." At Gramercy, the bar is in the informal front Tavern Room. The menu there is a la carte and, in many respects, different from the formal dining room's prix-fixe.
