The former involves much more elaborate cooking (More French - with more sauces and condiments with each entree) while Craft is very simplistic in cooking the highest quality ingredients (more contemporary American). My personal preference is Craft (it also has a very wide selection on their menu and definitely more seafood selection). However, I am sure you will still enjoy delicious food at Fleur de sel. It's my favorite french restaurant in the city that doesn't cost a fortune. It's also less formal than Craft in my mind. Either way you'll have an excellent meal.
