how far ahead can I ice a cake?

I have to put a whipping cream icing on a cake for tonight, how soon can I do it? The whipping cream does not have any stabilizers in it, unless powdered sugar counts.

  1. I'd do it as close as possible to the serving time, as whipped cream can get weepy. Depends on the cream, too. Whipping cream has a lower fat content than "Heavy" cream and doesn't hold up as well over time. ATK had an interesting version that used cream cheese (?) in the whipped cream and it was very cake friendly; held up over several hours or more. Adam
