Something to go with lamb merguez sausage?

I'm doing a sausage and side themed dinner and have been trying to come up with a veggie to go with my merguez. A vegetable tagine could work, but I'd love to hear some other thoughts. Trick is that we can't eat any grains or legumes, so veggies only!

  1. Definitely imam biyaldi, which is like a Turkish ratatouille. I don't recall where I got my recipe, but google around until you find one you like. FYI- I have seen it spelled biyaldi, bayaldi and bayildi, so try searching all three. It roughly translates to "so good, the imam fainted" - so you even get a good story to tell during that course.

      That sounds fabulous. Unfortunately, the birthday boy (whose dinner this is in honor of) is not an eggplant fan. Such a waste!

        I wonder if you could do it but to make it a bit more autumnal, replace the eggplant with slices of butternut squash? It wouldn't be as authentic, but I bet it could work. Or, thick slices of mushrooms?

    2. I'd go for pepperonata, or stewed peppers. With roast potatoes, if you can eat those.

      1. How about some combination of grilled vegetables, such as onions, tomatoes, peppers and zucchini, brushed lightly with oil and served with chopped cilantro? Multicolored peppers (red, yellow) look nice, too.

        1. I would do one side of spinach sauteed in olive oil with garlic (and toasted pine nuts, if do-able for your crowd). For the other, I'd make mashed turnips.
