I would seriously consider San Francisco Baking Institute in South San Francisco. They also run a bakery called Thorough Bread in the city on Church near Market St. Their bread is stellar.

Second that. I haven't been to their classes, but they'd be much more professionally targeted than something like Draegers for home cooks.
Their bread at Thorough Bread and Pastry really is excellent, with pitch-perfect renditions of classic breads from around the bread-eating world. They don't really have a house style, per se, because they're focused on technical control that allows them to replicate different breads in a very authentic way.
