Interesting Lobster Ideas

Lobster has gotten very inexpensive around here ( I just bought some for 4 bucks a lb). Besides just steamed with butter, any other ideas for lobster? Tonight I am making lobster risotto. I would love to hear some of your favorites.
Well, count your lucky stars! Actually, Lobster in the 19th century and before was considered peasant food.
One thing i like to do is make appetizers of sliced in half (vertically) mini popovers with lobster, mushrooms and onions covered with a little bit of lobster bisque and shredded cheese. I put them in a 350 oven for about 8-10 minutes until the cheese melts.
A few years back, we were in St Kitts with our kids......we stopped in a little out of the way place that had a delightful menu. I had what was basically a grilled cheese and lobster sandwich and fries. Maybe a few spices in the sandwich, but heavenly! Funnily enough, when the bill came, the fries were more expensive than the sandwich! When you're an island and everything gets ferried in except seafood, the economics change!
I love lobster pie, just lobster meat, mixed with ritz crackers, melted butter, little lemon juice, your favorite herbs (maybe parsley), bake in a pie plate just to warm through (325 maybe 20 min). It's excellent with some asparagus on the side/lemon sauce.
I had a great, fantastic recipe years ago for scallop and lobster bisque - it was in the boston globe and was Jasper Whites recipe. Maybe if you google, it could come up.
One of my favorite dishes at a restaurant near me is really great lobster crepes. The filling has good chunks of lobster is a sort of alfredo sauce, wrapped in crepe pouches which are then put under the broiler to crisp the very tops.
They're then plated with a creamy tomato sauce.
I've been craving it lately.
Cut the lobster in half and top with a sea urchin sauce and grill
Make a lobster roll
Stir fry with ginger and scallion
Head and any unused parts / shells for making miso soup
Lobster Mac 'N Cheese.....heaven!

Lobster and broccoli alfredo on ziti
Lobster, ginger, garlic, and chinese veggie stir-fry

Ive taken a beef tenderloin, butterflied it and put pre-cooked lobster tails and aspargus down the center and then tied it up. Did it once for a party and folks thought it was a hunk of fat ( I had sliced it) in the middle until I told them what it was
