Have crusts made now need your best no bake fillings

I don't have time to bake tomorrow and have to bring 3 pies(no bake). I made today, 2 graham crust and one chocolate crust.
I am thinking something cheesecakeish and something chocolate silk pie ish. Need cheater fillings (good quality cooked pudding,etc.)

With what can I fill them?

  1. i dont know if you have a trader joe's nearby, but a jar of their pumpkin butter (or any pumpkin butter, about 1 1/2 cups) and about 8 oz mascarpone, stirred together, makes a great no bake filling. if you want to get fancy, you can add some bourbon or rum, or paint the inside of the crust with melted chocolate.
    another good one is lemon curd+mascarpone.

    1. Jell-o brand cook and serve pudding made with evaporated milk to really add to the richness. Add real whipped cream and chocolate shavings.

          Condensed milk, cool whip -- you're on your way. Go to the Eagle Brand website and enjoy. I haven't met a bad one yet.

            I've done one with condensed milk, Cool Whip and peanut butter...in an Oreo cookie crust and then dark chocolate shavings on top to garnish..but graham cracker crust would also work...it's very junky and trashy but it tastes so good! Someone brought it to work for a buffet and it was gone in a few minutes.

        2. I love lemon curd. You do have to cook it on the stove top. Then just put in baked crust and put under the broiler to carmelize the top. Or if you like, make a meringue and toast in oven for a lemon meringue pie.
