Spicy Japanese style chicken wings
I few weeks ago I had spicy japanese style chicken wings at Ippudo here in New York. They were not chile spicy, but spicy from black pepper. Now I'd like to try them at home. Does anyone have a recipe similar to the wings at Ippudo? Thanks!
I wonder if they have adapted a Chinese salt-and-pepper shrimp or fish recipe.
Alton Brown has a chicken wing episode, a recent one if I'm not mistaken. Instead of deep frying, he steams the wing pieces to get rid of much of the fat, then oven-fries them. For his second batch he used a seasoning mix that had Asian overtones.
Did the Japanese place use panko crumbs or a tempura batter?
