Best restaurants in and around Philadelphia?

My wife and I recently received promotions and now, two years after graduating from college, can finally afford fine dining. We live in Wilmington and have discovered that it is a culinary wasteland so we are turning our attention to Philly along with Chester, Delaware, and Montgomery Counties. I know that there are many PT'ers from the area so we would love to hear your recommendations. They need not be for true fine dining, solid inexpensive restaurant suggestions would also be appreciated. We are truly open to any cuisine although our favorites are Italian, Cajun, Creole, Thai, Chinese, Vietnamese, and Contemporary American.

      Sovana Bistro is very good also and is close by in Kennett Square. Much better than the lousy food in DE (except for a few good but very casual places). I also like Estia a lot in Philly for fresh seafood, and Tria for more casual fare.
