King Ranch Casserole

Reading the Maria Maria menu[thanks rene]I noticed the following:

CHICKEN AND MOLE TORTILLA CASSEROLE

Shredded Chicken,Sweet Mole and Tortilla layered pie with Roasted Poblanos,Crema and Cheese topped with Oven Dried Tomatoes and Pickled Jalapenos.

That sounds wonderful but at $15 dollars this is one price-y King Ranch.

Which leads me to ask what is your favorite source in town[or even a half hour or so out of town]for King Ranch?

  1. I'm confused. I've never known King Ranch to have mole in it.

    But $15 is pricey by Austin standards.

    1. No way this is King Ranch Casserole. It sounds like a good casserole, but it's not King Ranch casserole, which is Texas' answer to the midwestern staple of tuna noodle casserole.

        You are absolutely right: this mole stuff does not resemble the King Casserole at all.

      2. Every once in a while Whole Foods at 6th & Lamar has King Ranch Casserole on the hot bar. It's pretty good, very cheesy.

        I've never been able to buy KRC that tastes better than my own. A good friend has an enormous smoker. He made waaay too much chicken for a party not too long ago. I made 3 (yes 3) 13x9 dishes of KRC and gave them away to friends. The smoked chicken made it rock! Reminds me of the Smoked Chicken Lasagna that Mezza Luna used to serve, back in the day...

        1. I'm partial to the KRC from the Central Market deli case. I believe they offer it daily. It's about 4 inches thick, and cut into big squares, and each serving is approximately $6 by weight. It's convenient comfort food, and it reheats well in the microwave. For those days when you just don't have time to cook. These are LARGE servings, so one "cube" might actually be two servings for a light eater.

          I've only gotten this at Central Market South, so I can't verify that they offer this at the north store.
