I've never heard of anyone raising swans for food, and I believe it's illegal to hunt them - I have never heard of anyone eating swan.

swans were commonly eaten in the middle ages throughout europe. However, in england all swans belong to the queen and it's illeagal to hunt or catch them. My understanding is that royalty still eats swan for feasts on occaision.
In anycase it's an edible bird and i don't see any reason why one couldn't/shouldn't eat them. I would also be interested in trying flamingo but i suspect that's even harder to find then swan.
