Can anyone recommend some delicious butternut squash dishes they've encountered recently in Manhattan?

I had a great butternut squash fonduta topped with pumpkin seeds at Po - it was sooo good. the plate also had a chili oil drizze which added just the right touch of heat to cut through hte richness of the dish.

butternut squash (BS) risotto at Craft
      BS soup at Jean Georges
BS and apple raviolo at Belcourt

A lot of the times BS is used as condiment to the meat /seafood, so the above dishes have BS as the main ingredients. You will find a lot of BS used in the current Gramercy Tavern menu, but mostly as a condiment.

Butternut squash risotto- it seems to be all of the rage at galas these days. If I remember correctly, I just had it at a tasting at the Milennium Hotel midown.
