Poblano Chicken Cups
Get a rotisserie chicken from the megamart; take the meat off and shred it.Take 2 Poblano peppers, seeded & de-veined, and 6-8 Tomatillos de-papered. Cut them in half and broil till blackened. Place blackened goodies and their juices plus a tablespoon of cumin and a couple shots of hot sauce in a blender and pulse to a chunky paste. Combine sauce and chicken and spoon into those frozen, premade Phyllo cups. Or if you have a mini muffin tin, oil some wonton wrappers, tuck them into the mini muffin tin and bake @ 350 until Golden and crunchy; stuff the cooled cups with the Poblano Chicken mix.

Bacon wrapped Chicken Bites - they will look like lollipops, just broil them as you would bacon wrapped scallops. Use small piece/cube of chix breast. We usuallly have them on the grill on a skewer - everyone loves em. Here's a great version:
