What can I bake with shredded carrots

I found a bag of pre shredded carrots my house sitter left behind. What can I make with them please?

    Your title refers to "bake" but why not make a healthy stir-fry with them tonight? I love pairing them up with broccoli....there's always soup which is a big topic on this board right now, too!

      I was thinking a bread or cake...not a fan of carrot soup but the stir fry is an idea...

        Last night I made the most amazing carrot souffle. My children scarfed it up & ignored their rice & chicken!

        This is my aunt's recipe that she gave me:

        1 to 1 1/2 lbs cooked carrots (I steamed mine)
        3 eggs
        1/3 cup sugar
        2 T flour
        1 t baking powder
        1 t vanilla
        1/2 cup melted butter
        dash each of nutmeg & cinnamon

        Puree cooked carrots until smooth. Add eggs. Add rest of ingredients & puree until nice & smooth. Pour into greased 1 1/2 qt. dish. Bake at 350 deg. for 1 hour. Serves 4-6.

          They are great in a slow cooked tomato sauce - I frequently throw in a grated carrot or 2 as they are full of natural sugar. Cole slaw of course. Muffins , carrot cake. Almost any quick bread recipe can handle some carrot thrown in....

            you could use your favorite zucchini bread recipie as they sub in well. or carrot cake?

            Also, if you have other veggies to shred you could make a fritter.

              Yes, I've used shredded carrots instead of the pureed carrots in the Silver Palate's carrot cake recipe and it turned out fine.

              You can mix at least some of them into a meat loaf.

                Yes, I make turkey burgers with shredded carrots and zucchini all the time. Recipe was in Real Simple last year, I think.
