Lost recipe with graham crackers
A roommate many years ago made me cookies made with graham crackers. You boiled together sugar, butter, maybe had some added baking powder/soda at the end. It was poured over a pan of graham crackers which soaked it up. I think there were almonds sprinkled on at the end?
It was such a simple recipe that I never wrote it down and then after not making them for a long time, forgot the recipe. Help please!
I used to make this all the time, but I'm not sure where my recipe card is now. I would line a baking tray with graham crackers, then sprinkle sliced almonds on top, then pour over a brown sugar/butter combination. It would bake in the oven for a while, then I would top with chocolate chips, pop back in for 3 minutes, take out and smear the chocolate around. Very yummy. If I can find the recipe in my renovations mess, I will post for you.
I have one at home like that. They are Praline Cookies, and I use pecans, but I'm sure almonds would be great, also. When I get home I'll find it and post if for you. I don't remember using any baking powder though. I googled praline cookies made with graham crackers, and found a bunch, but I don't think they are the same as mine, but I could be wrong! It's been a long time since I've made them.
I have 2....one with saltines and one with graham crackers.....
The crackup recipe:
Preheat oven to 400
1 1/2 sticks margarine or butter
1 cup brown sugar
1 "stack! Premium saltines
1 10 oz bag Peanut Butter chips
1 12 oz bag Chocolate chips
1/2 - 3/4 cup chopped nuts (optional)
Line a large rimmed cookie sheet with one layer of saltines
Melt the margarine or butter and brown sugar together and pour over saltines
Bake in oven 5 minutes
Sprinkle with chips
Bake in oven for 1 minute
Spread chips with spatula
Top with nuts if desires or "decorative" sprinkles
Place entire sheet in refrigerator
When completely cooled and hardened break up into pieces
The Cracker Brittle recipe is easy:
Foil line a cookie sheet. Fill with as many graham crackers as possible. Bring to a full boil two sticks of butter and 3/4 cup of light brown sugar. Make sure it boils to a rise. Pour over crackers and bake at 400 for 5 mins. Remove and add milk chocolate chips (or whatever flavor you like) to the crackers. Bake 3 mins. Remove and spinkle candy beads. Refigerate until hard. Peel foil off and break apart. Enjoy.
