Other things to do with rotisserie chicken?

Christina Ferrare had some great recipes for what to do with rotisserie or baked chicken on Oprah the other day. I made two of them...chicken pot pie with cornbread crust (I used T.J.'s cornbread mix) and it was great. Also, enchiladas. Both really good! Any other ideas?

    Usually I use the chicken in a salad (possibilities are endless) or panini. Make sure to use the carcass to make chicken stock!!

      I shred the chicken out and mix with

      A) A bottle of BBQ Sauce
      B) A jar of Red or Green Salsa
      C) A bottle of Greek or Russian salad dressing
      D) Chopped olives, celery, fennel, capers, garbanzos, canned soy beans or black beans, diced or grape tomatoes, cubed cheeses of various kinds, artichoke hearts or hearts of palm...

      and serve with flatbread, pitas, tortillas, etc as a "burrito" or roll-up.

        We went to a friends home the other day, and they made dinner salads and added the chix to it.

          In addition to the other great ideas already posted, I have shredded the leftover rotisserie chicken for a buffalo chicken dip that I originally found on the Frank's hot sauce website

            Chicken & dumplings
            Chicken flautas
            BBQ pizza
            Any type of chicken salad
            Chicken spaghetti
            Thai chicken-coconut soup
            Chicken tortilla soup
            Thai chicken pasta
            Chicken in peanut sauce
            Cobb Salad
            Chicken Tetrazzinni

            Remember to save the carcass so you can make yummy homemade chicken broth. All it takes is a crockpot, veggies & seasonings. If you can't get to it now, freeze the carcass for later.

              your basic hot chicken sandwich: bread, gravy, chicken, gravy, bread, gravy, peas.

                I use leftover rotisserie chicken to make chicken curry on week nights when I don't have time to make it from scratch. Here's the basic recipe:

                -saute a sliced onion, lots of garlic cloves, 2" of ginger, a diced tomato, and a teaspoon each of cumin and caraway seeds in a few tablespoons of olive oil for about 10 minutes
                -dice the rotisserie chicken and throw it in the pan
                -add a teaspoon each of salt, chili powder, and powdered coriander seeds
                -add some plain yogurt, cream, or coconut milk and cook for a few more minutes
                -eat over rice

                I also like to dice leftover chicken and add it to fried rice or mexican rice.

                    There's always using the carcass for homemade broth.

                    I like curry chicken salad - mix shredded chicken with sour cream or mayo and yellow curry powder, some mango chutney. Then add things like chopped celery, apples, nuts, grapes. You can do other types of cold chicken salads too. ... one of my favorites is also waldorf chicken salad.

                      make the delicious vietnamese chicken and cabbage salad, goi ga. typically made with poached chicken but i have made it with rotisserie or really any chicken leftovers.

                      though somehow, they list teast as an ingredient, but never include it. that's for the best, as far as i know, it doesn't belong.

                      i usually just wing it. cabbage, carrot, chicken, fish sauce, lime, peanust. tasty, healthy, can't go too wrong.
