What to do Mussel Broth ?

I've got a couple of cups of left-over mussel and clams broth. It was prepared with onion, garlic and tomatoes while steaming mussels and clams.

I could freeze it and re-use it later, but tomorrow, I have a brunch to prepare and looking for ideas to use it right away.

Could I use it as a base for a fish soup or stew or something ? It's quite strong in taste, I don't know exactly how (or with what) I could "dilute" it to use it in a recipe.

Thanks.

Max.

It's for dunking enormous amounts of bread into. You serve the broth *with* the mussels.

Well, after dunking enourmous amounts of bread into it, I *still* have a good quatity of broth left , or I would not ask around.

You can add it to anything appropriate that calls for some liquid -- a seafood pasta sauce or exotic seafood stew, in a risotto, etc. You could even freeze it till you find a reason.

I reduced it and added it to a white bean stew served with grilled monk fish (lotte)

          Thanks.

Try it in a Bloody Caesar -- http://en.wikipedia.org/wiki/Bloody_C....

It will work well in a shrimp bisque, as some cream is added and the shrimp flavor will dominate.
Or a tomato based seafood soup, like Cioppini, using the broth as stock..
You could even do more mussels, as in moules marinere, using the broth for steaming, and a base for the creamy garlicky sauce with the shellfish.

Drink it hot. Pretend it is soup which it is. Vodka chaser would be nice
