Red Sauce

I searched this board for "red sauce" and got nothing that I'm looking for after three pages. Sorry if there are threads out there, I couldn't find them.

I'd like to get peoples recipes (including procedures/technique) for making a red sauce. Not a marinara, but like a lasagna sauce, meatball sandwich sauce, or other heavier red sauce.

Here's what I do, and have been doing it this way for 20 years. It may not be to 'houndy, but I'd love to improve and change it now that I've dialed into this site.

5-6 cloves of garlic
1 diced onion

28 oz can of whole tomatoes
14 oz can of tomato sauce
8 oz can of tomato paste
(For these I’ve used anywhere from store-brand to San Marzano depending on my budget)

Bring to a boil
Mash the whole tomatoes
1 clove fresh fine chopped garlic
Simmer (for about 45 minutes)

Fresh parsley
Fresh Basil
Salt & pepper to taste

  1. when you are sauteeing the onion and garlic add equal or slightly lesser amounts of finely diced (or put through a cuisinart - even better) carrot, celery, leek, or even bell peppers, it adds a lot of flavour to the sauce
