kasha varnishkes w/ duck fat

Inspired by Mark Bittman's treatment of kasha varnishkes in yesterday's Times, I decided to give it a whirl for tomorrow night. I happen to have some duck fat on hand, and was thinking of substituting it for the traditional schmaltz. Good idea?

  1. Yes, it will work very well. I often use goose fat.

    1. Don't forget the side of kishka to make it a perfectly healthy meal. Sounds divine. Pass the Lipitor

      1. Rendered duck or goose fat is also a traditional schmaltz. I have some goose fat on hand, and am feeling tempted myself, as well.

        1. Perhaps needless to say, the kasha varnishkas prepared with duck fat turned out smashingly delicious. Not quite sure I detected the marked difference in taste from the usual chicken fat verson. Perhaps a little richer. But really quite good (how could it be bad?)
