Who serves the best gypsy omelet?

A "gypsy omelet" is merely a cast iron skillet whose bottom is covered with hash browns and an omelet with your choice of fillings piled on top. Not very complicated, but leagues above any similar dish served on a plate with all items separated.

Can anyone list breakfast places in Manhattan that serve it this way? Online menus don't necessarily describe it as such. Thanks!
