Fried Bacon from Boucherie Fairmount!
Oh dear. Avert your eyes if you are on a calorie-reduced diet...
I was in Boucherie Fairmount on St. Laurent, looking for my usual Chicharron snack. As I was waiting to be served, one of the butchers came out with a pile of gleaming hunks of pork. "What's that?" I asked, my eyes widening. "Fried bacon. I just made it." he replied. "You want?" Uh, Yeah!!!!
I love a place that sells fresh fried bacon!
You gotta be a bacon lover, but if you are, this stuff is insanely good. It was still hot when we sliced it up. The bacon is quite delicate in its own bacon-y way, not too salty, nice pork flavour, NIce layer of bacon fat overlying the meat, good meat to fat ratio. You may want to chop of the chewy outer crackling layer, but as I like chewy things, I left it on. I am sure I've taken a few months off my life expectancy, but yowza! I'll do penance with a lot of vegetables over the next few days...
That looks fantastic, moh. I think I mentioned Fairmont in the past, that I must have walked past maybe 132 times on my way to Vielle Europe or Slovenia and didn't give it a glance.
When I did walk in, I was happily surprised to find not only a good butcher, but a great charcuterie!
I've visit everytime in the area, even if just to say hi, and I can't leave without buying at least a few of the cracklings.
Joe, the proprietor, says that he sells ALOT.
BTW, was just there on Thurdsday to pick up an ordered, whole brisket. Its curing now and I should have Montreal style smoked meat by the 26th. Also ordered a small fresh ham, hoof and all - should have prosciutto by spring...

I agree - I can't say enough nice things about that man and this establishment. I've been going there essentially since I moved here and I'm still puzzled occasionally at how inexpensive it can be for such nice quality meats. He's just so... proud and confident of the product he puts out. It's getting rarer and rarer nowadays. Only down side is if you're not in to pork, there's a good chance they're not going to have what you're looking for. Coming from someone named "porker", I can see that's not a problem for you though ;)
