Use it to make mashed potatoes. That's what I do when I have leftovers evaporated milk. If I don't want it right then, I just pour it into a small jar and refrigerate. I have never left it more than a day or two so have no idea how long it will last.

If you drink coffee or tea use it instead of cream.

Make some Hong Kong-style "milk tea"!
Bring some water & loose strong black tea (or bags if you don't have loose) to a boil, then cover & simmer for about 15-20 min. Add evaporated milk and sugar to taste, and simmer (you may need to turn up the heat a bit) for another 5 min. or so. Delish!

The only thing I do with canned evaporated milk is make the Best Recipe macaroni and cheese (similar to Alton Brown's). It's super creamy and cheesy.
