Pairing for stuffed pork chops
Preparing boneless chops with a stuffing that includes diced cranberrys, apples and almonds. There's a nip in the air, and I'm in the mood for a red.
I'm thinking maybe CdP.
a nice beaujolais perhaps? I'm a big So Rhone fan but for some reason that doesn't strike me as the right way to go. you didn't inquire but I think a riesling might work from the white side
My first reaction would be Riesling, but i you are going red, I would go with a Barbera.
A fruity Pinot (or Beaujolais) would also work.
There's a coincidence! We just cooked something similar for dinner on Saturday:
- Pork filets with a Fleur de Sel crust
- Savoy cabbage in (very) light soy sauce
- Garlic mashed potatoes
- Cranberry chutney
To that, we had a classic Gigondas from Domaine Goubert, 2000:
