Between Hillsboro and Waco-interesting dinner?
I am going to meet my sister-in-law in that area on Monday for an all day cooking class then out to dinner somewhere around there. She likes ethnic food but also good meat. She would not mind a good sausage dinner (West? Saw only kolache recommendations for there). Price is not a problem but interesting and good is most important. Saw a restaurant in Waco called Kitocks that sounded interesting but want any and all suggestions and also some idea if suggestions are close to 35E. Thanks for any help.

Kitoks is good , but it is a hamburger joint , nothing more.
You can definitely find plenty of sausage and ham in West , Texas ; it's not just kolaches . Remember , in West you need to skip the places along the interstate , and go into the town proper , 4 or 5 blocks east of the intersate .
The next town north of West is Abbott , Texas , and you can get a really great turkey dinner there at the Turkey Store . They specialize in roast turkey and all its permutations . Very casual , and cafeteria style service , they can load you up with a delicious turkey and dressing dinner . Phone 254-580-9644 . Perhaps with a bottle of pinot (BYOB) .
If you will use the Chowhound search engine on this board , you will find that Waco has pretty well been hashed over .
Good luck .

re: pinotho
Thanks to all. I went down there to go to a cheese making class (at Heritage Farms near Elm Mott-pretty good). We were so full of cheese samples and lunch that we did not bother with dinner-I had been to many of the places mentioned in recent threads about Waco and environs and wondered if there was any place else. I will keep the Turkey Store in mind in the future. I did because of other threads stop in West and get cheaper gas and a great kolache.
