Grand Cayman--morritts resort on eastend

My sister-in-law are travel to Grand cayman for the first time. We are staying in a time share , so we have a kitchen. I don't mind cooking breakfasts but I would like so really good ideas for lunch and dinner. I really enjoy local Carribean cooking so that would be my first choice and I love to eat on the beach. I want to take her out for her 41 birthday, some place nice but not too stuffy or formal. I have heard that buying a bottle is very expensive so should we bring it from home. I am hoping that the duty free shop will be opened when we leave JFK at 7 am on a sunday. I have also promised her at leat one nihjt out clubbing? Any suggestions--maybe somewhere we could eat first then party
