Sweetbreads in OC - stores & restaurants??

    Ellen - My girlfriend and I dined recently at Marche Moderne in South Coast Plaza and she had the sweetbreads entre. It was the first time either of us had tried them (I sampled hers, of course). We both liked them. They were slightly battered and I believe, pan fried. The texture of the sweetbreads was slightly creamy and was a nice counterpoint to the slightly crispy exterior. Good luck...

      I agree, Marche Moderne would be a good place to have sweetbreads.

      I also would suggest eating it at a restaurant instead of cooking them yourselves unless you really know what you are doing with the raw ingredients. I think you need to soak them in milk first. Also, I don't know how hard it would be to get fresh ones.

        Marche Moderne is definitely on the goto list but I enjoy making sweetbreads, just haven't been able to find them for quite some time. I will ask tomorrow at Whole Foods if they will order them for me.

          That's great that you can make your own sweetbreads! I enjoy cooking, but I don't have the guts to make that dish.

          If Whole Foods can't get it for you maybe Bristol Farms can.
