Salumunovich's Avondale is Now Open

Thomas Salumunovich (Larkspur in Vail, Larkburger in Edwards) first venture in operating a hotel restaurant is now up and running. Avondale in the new Westin Riverfront in Avon opened this week. The hotel and the restaurant did a grand opening yesterday.

      Claire, just go with Thomas S. I had a meal a couple of weeks ago at Avondale as Thomas and his staff were getting ready. His executive chef is doing some really interesting things, lots of fresh produce done extremely well. My guess is we are in for lot's of root veggies during the winter. The idea is to do many items that have good value, well. I had the lamb shoulder and it was perfect, but for a non-adventreous dinner, it might have spooked them.

      The setting is different than anything else in the Eagle River Valley. The view is wonderful and the room is built around it. Thomas' wife did the art and it works really well.

      I'll try it again later this week and do a report. Just an aside, Thomas has developed a great staff that allows him to expand the "Larkspur" approach through-out the Valley. And his chief marketing person, Sue, makes everything seem so effortless for clients.

        Thomas S. said that he did more than 20 soft opening dinners (compared w/ just 4 for Larkspur, which he said wasn't nearly enough) -- and he gives all sorts of credit to his talented crew. He's also planning to open two Front Range Larkburgers (Boulder and Denver), on before the end of the year and the other in '09.

        As for root vegetables versus other offerings at Avondale this winter, hotel restaurants also have to be responsive to their guests and meeting/conference business -- not only to locals. If the find that these folks want pineapple and raspberries in January, Avondale might just have to modify its idealism.

          We'll be there later this month. I wonder why he changed the name from the planned Watermark, however. Does Avondale have an adjoining market? I have a postcard from last year's James Beard Taste America Dinner at Panzano (where Mr. S. made a lovely beet and endive salad) which proclaims: "Watermark: Opening Summer 2008. Thomas Salamunovich, chef/owner of Vail's popular Larkspur Restaurant, will be opening his newest endeavor: Watermark, in the new Westin Riverfront Resort and Spa at the base of Beaver Creek Mountain in Avon. Drawing upon his California roots, Salamunovich will focus on utilizing local and seasonal products. Salamunovich's New American cuisine willl emphasize purity of ingredients, simplicity of preparation, and abundance of flavor. In addition to the full-service restaurant, an adjacent Market will serve customers on the go. Espresso drinks, breakfast items, house-made sandwiches and prepared entrees will be available. Watermarket will share the same ideals as Watermark, featuring regional artisanal products."

            RLM, they had to change the name because of trademark issues. The Market is right across the plaza from the base of the gondola to Beaver Creek Landing. Its the same approach as the Market in Golden Peak building in Vail (Golden Peak lift the best way up Vail Mountain). Larkspur is also in that building.

              Larkburgers on the front range this year? Any information on locations?

                Danb- The Boulder Larkburger is expected to open before the end of the year in the former Men's Warehous space ( Arapahoe between Folsom and 28th). The Denver location somewhere near the Tech Center is supposed to open in 2009.

              RLM - There is a small market right in the hotel selling pizza and other foods prepared in the Restaurant Avondale kitchen, gelato, snacks and some items for guests who are looking for a few items to prepare in the kitchens/kitchenettes of their units. It might not be fully stocked until ski season.
