There are a couple great places to go for hand roasted beans. The first is just north of the Pompidou center. It's basically behind the movie theatre in quartier horlodge. The second is up fauberg st denis on the right just passed Juhles (a great cheese store). Sorry about the lack of addresses, if I am at either I will note their address.
