IR restaurants in singapore?

any news of which celebrity chefs would come here and set up a restaurant??
chefs bent on world domination

  1. So far, I've only heard from the French maitre'd of L'Atelier de Joel Robuchon HK (he's also worked in Robuchon Tokyo) that the boss man is interested to open in Singapore's Marina Bay IR.

    I don't think any other celebrity chefs had serious plans so far. Different case in Tokyo where, in recent years, we've seen new restaurants by foreign celebrity chefs like Paul Bocuse (Brasserie Paul Bocuse Ginza, and Brasserie Paul Bocuse le Musee in Roppongi), Terence Conran (Iconic Ginza) & Luke Mangan (Salt in Shin-Marunouchi Bldg). Bill Granger of Sydney had a successful Bills Cafe promotion in Daikanyama last year, and is planning to open a permanent outlet in Shonan this year.

      Hi KL,

      I think its a real shame that there are not yet been chefs in Singapore that have come to light that can use Asian food as a base to do some creative things with it, Michelin style. At least, in all my travels I have not yet found one.

      The only one that I've seen is a German in Berlin - Tim Raue -

      He's the only one I've seen around the world that has used duck's tongue and chicken feet in his recipes, done in such a way as to be so outstanding that people that did not like exotic food started raving about it.

      Let me know if you come across one. I'd be interested next time I'm in town.

        You may want to try Club Chinois at Orchard Parade Hotel: they served some creative modern fusion Chinese food in Western ambiance. I went back there again one week ago after being absence for the last 3 years due to the declining standard. I am glad it had regained back its previous standard, and I am sure I will be back there again.

        Also surprised to note on your personal profile that Sin Lee is one of your favorite restaurants. Sin Lee is a hidden gem here; not may Singaporeans even know about this place. And I personally think their braised shark fin is the best in town!!!

          Thanks for the tip. Will check it out when I'm there (hopefully) at the end of the month.

          It may be because I spent 18 years of my life in S'pore, including NS. I knew Sin Lee when it was ummm... ...a humble corner "hole in the wall".

          I don't do shark fin, but I swear that their bamboo clams are the best in the world and their fried rice soup also. Just thinking about the dishes gives me hunger pangs.

          Since they moved, my family has noticed that the number of expats visiting is growing. Good for both them and Sin Lee!

      2. Actually it was reported in the local papers that Charlie Trotter will be opening a seafood based restaurant in one of the IRs. He was also photographed tucking into local dishes.

          I missed that article (am in California at the mo) - was it announced during the Singapore Sun Festival whence Charlie Trotter was in Singapore, 20-21 Oct? Las Vegas Sands who's going to run the Marina Bay IR is trying to get both Charlie Trotter & Thomas Keller to open restaurants in Singapore. But Thomas Keller has never branched out of the US before, so the likelihood of Charlie Trotter coming is higher.

            Yes, it was announced during Trotter's trip for the festival. You are right abt Thomas Keller, he is not likely to venture out of US. Otherwise he would have been in HK, Shanghai or Japan by now.

        2. there is certainly a very high possibility that joel robuchon will open in singapore
          he onced said he will open in nyc, london, hong kong , tel aviv, and singapore... now only left with singapore.. his tel aviv restaurant will open next year
