The best of Bulgarian cuisine

Here is a best of Bulgarian cuisine list that needs a bit of editing. I spent a lot of time researching items on this list, please read it and if you are a resident or expert on the country's food then feel free to make corrections or additions as you see fit. Any tips, hints, and/or favourites based on the criteria listed below will be greatly appreciated. Once complete, our list should help visitors find exactly "the very best in Bulgarian food experiences.

CRITERIA for LIST:
-specialty/unique regional cuisine/gastronomy (or the BEST places to eat (w/ local's prices, food made with love/regional favorites, and not too many tourists eating there)),

Patatnik,
Kyopulo,

Kashkaval pane, (anything with cheese, yoghurt should be on this list)
Chushki buyrek,
Sirene po shopski,
Banitsa,
Shoppe style cheese,
Panaguyrski yaitza ,
Piroshka,
Kiselo Mlyako (bulgarian national yogurt),
Ayran (yogurt drink)

Snezhanka,

Breakfast:
Popova zakuska,
Kozunak (what other delicious breakfast options are there?)

Deserts:
Kompot,
Trigunki,
Palachinka (pancake crepes?),
Kifla,
Kifli,
Garash Torta (not sure if this is really Burlagian)?

Meat:
Elenski but (a kind of ham?)
Zelnik,
Soujouk, Lukanka, Babek, Sushenitsa sausages,
Kavarma,
